Instructions

  1. In a large skillet over medium-high heat, cook the ground beef, onion, and garlic until the beef is no longer pink. Drain off any excess fat.
  2. Transfer the beef mixture to a 6-quart slow cooker. Add the tomatoes, black beans, corn, green chiles, chili powder, cumin, oregano, salt, pepper, and chicken broth. Stir to combine.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  4. Stir in the rice and cook for an additional 30 minutes on high or until the rice is cooked through.
  5. Stir in the cheese and cilantro and serve.
